Chocolate Chip Cookies

This is the classic Nestle Toll House Recipe, adjusted to be GF. A work in progress.

First attempt (makes about 48 cookies)

1 cup butter at room temperature, unsalted
3/4 c white sugar
3/4 c brown sugar
2 tsp vanilla extract
2 eggs
2 1/4 c GF all purpose flour
1/2 tsp xanthan gum
1 tsp baking soda
1 tsp salt
lots of chocolate chips

Cream the butter, sugar, and vanilla. Add eggs, beat until smooth. Add dry ingredients (ideally sifted together), mix until combined. Then add chocolate chips to taste.

Bake at 350 F for 9-10 minutes, until the bottoms are brown and the tops are starting to turn golden. Don't overbake.

The dough freezes well, but doesn't keep for more than a day in the fridge.

  1. creaming the butter sounds like something you should keep to yourself.

    Has all this baking made you actually able to gain weight?

  2. also, it made me type the word mugar to ensure that I am on the terminator.

    mugar sounds delicious. Can you make it gluten free?

  3. Unfortunately mugar is only available with gluten.

    I'm somewhat terrified that computers are making sure you are on the terminator.
